Tuna Pasta with Savory Sauce

1 (16 ounce) package penne pasta

1 tablespoon olive oil

1 medium onion, chopped

2 cloves crushed garlic

1 (14.5 ounce) can crushed tomatoes

1 tablespoon capers

1 tablespoon lemon juice

1 tablespoon chopped fresh parsley

¼ teaspoon red pepper flakes, or to taste

2 (5 ounce) cans tuna, drained
Cooking Instructions

Bring a large pot of lightly salted water to a boil. Add the penne pasta and cook for 10 to 12 minutes, stirring occasionally, until the pasta is tender yet firm to the bite.

In a large skillet, heat some oil over low heat. Add chopped onion and garlic, and cook until the onion becomes soft, about 5 minutes. Then stir in tomatoes, capers, lemon juice, parsley, and red pepper flakes. Let the mixture simmer for about 3 minutes until the sauce thickens. Fold in the tuna and cook until fully warmed through.

Drain the penne pasta and return it to the pot. Pour the tuna sauce over the pasta and toss to coat evenly.
