Turducken: A Three-Bird Wonder

1 (3 pound) whole chicken, deboned

1 (4 pound) duck, deboned

1 (16 pound) turkey, deboned

3 cups prepared sausage and oyster dressing
Instructions
Preheat your oven to 375°F (190°C). Place the boneless chicken, skin side down, on a large platter and generously season with salt, pepper, and Creole seasoning. Next, layer the boneless duck, skin side down, over the chicken and season it the same way. Cover the platter and refrigerate until ready to proceed.
Place the boneless turkey, skin-side down, on a flat surface. Spread a generous layer of chilled sausage and oyster dressing over the turkey, making sure to stuff the dressing into the leg and wing cavities to maintain the appearance of bones.
Position the duck on top of the turkey, skin-side down, and layer it with more chilled dressing. Then, place the boneless chicken on top of the duck, skin-side down, and cover it with another layer of the cold dressing.
With assistance, lift the edges of the turkey skin and secure them together with toothpicks. Use kitchen twine to bind the edges around the toothpicks, helping to keep the turducken tightly closed. Carefully transfer the assembled turducken, breast-side up, into a large roasting pan.
Roast the turducken covered for 4 hours, or until the outside is golden brown. Afterward, uncover and continue roasting for 1 more hour, or until a meat thermometer inserted into the thigh reads 180°F, and a thermometer inserted into the stuffing reaches 165°F. Check periodically to baste and remove any excess juices. Once done, carve and serve.
