Turmeric-Spiced Chicken Stew

2 skinless, boneless chicken breasts, cubed

2 medium sweet potatoes, cubed

½ medium red onion, chopped

1 small eggplant, cubed

2 cloves garlic, minced

1 tablespoon minced fresh ginger root

2 teaspoons ground turmeric

½ cup low-sodium chicken broth, or more as needed
Instructions

Heat oil in a large skillet over medium-high heat. Add chicken and cook, stirring until the chicken is no longer pink in the center, about 5 minutes. Add sweet potatoes and onion, and cook until the onion becomes translucent, 2 to 3 minutes. Stir in eggplant, garlic, ginger, and turmeric, and cook until fragrant, about 1 minute.

Pour in the broth and bring to a boil. Reduce the heat to a simmer, stirring occasionally and adding more broth if needed, until the vegetables are tender and the stew has thickened, about 20 minutes.
Helpful Tips
If you prefer, you can substitute canola oil for olive oil and use water instead of chicken broth.
