Instructions
In a food processor, blend great Northern beans, 3/4 cup of tomatoes, and garlic until smooth. Add in nutritional yeast, cumin, chili powder, salt, and cayenne pepper, and blend until well combined.
Transfer the bean mixture into a large mixing bowl. Stir in the black beans and the remaining 1/4 cup of tomatoes for added flavor.
Heat olive oil in a large skillet over medium-high heat. Place a tortilla into the hot oil, then spread about 1/4 cup of the filling onto the tortilla. Top with another tortilla and cook for about 10 minutes, or until the filling is warmed through.
Spray the top tortilla with cooking spray, then flip the quesadilla to cook the second side until golden brown, about 3 to 5 minutes. Repeat the process with the remaining tortillas and filling.
