Vegetarian Goulash

Ingredients List

1 teaspoon olive oil

½ medium onion, thinly sliced

1 small green bell pepper, thinly sliced

4 ounces mycoprotein pieces, e.g., Quorn™

1 clove garlic, chopped

1 teaspoon paprika

1 (14.5 ounce) can whole peeled tomatoes, chopped, juice reserved

½ cup red wine
-
1 teaspoon dried oregano
-
1 teaspoon tomato puree
-
1 teaspoon sugar

salt and pepper to taste
Instructions

Heat olive oil in a large pan over medium heat and sauté the onion until softened, about 5 minutes. Add in the green pepper and mycoprotein, sautéing for an additional 5 minutes until the pepper softens. Stir in garlic and paprika.

Add the tomatoes with their juices into the pan. Stir in the wine, oregano, and tomato paste. Bring to a boil, then reduce the heat to low and simmer for about 25 minutes until thickened.

Before serving, stir in the sugar and season with salt and pepper to taste.
