1 ½ teaspoons dried thyme

1 teaspoon dried rosemary

1 pinch ground cayenne pepper

1 ½ teaspoons mixed spice

1 egg, beaten

1 ⅓ cups steel cut oats
Cooking Instructions

Heat vegetable oil in a saucepan over medium heat. Sauté the onion for 5 minutes until softened. Add the carrot and mushrooms, continuing to cook for another 5 minutes. Stir in the broth, lentils, kidney beans, peanuts, hazelnuts, soy sauce, and lemon juice. Season with thyme, rosemary, cayenne pepper, and mixed spices. Bring to a boil, then reduce the heat and simmer for 10 minutes. Stir in the oats, cover, and simmer for an additional 20 minutes.

Preheat the oven to 375°F (190°C). Lightly grease a 5x9 inch baking dish.

Stir in the egg into the saucepan mixture. Transfer the mixture to the prepared baking dish. Bake for 30 minutes, or until firm.
