Waikiki-Style Meatballs

1 ½ pounds ground beef

⅔ cup crushed saltine cracker crumbs

⅓ cup minced onion

1 egg

¼ cup milk

1 ½ teaspoons ground ginger

½ teaspoon salt

1 tablespoon olive oil

2 tablespoons cornstarch

½ cup packed brown sugar

1 (15 ounce) can pineapple chunks - drained, with juice reserved

⅓ cup white vinegar

1 tablespoon soy sauce

⅓ cup chopped green bell pepper
Instructions

In a large bowl, mix together ground beef, cracker crumbs, onion, egg, milk, ginger, and salt. Shape the mixture into meatballs using a tablespoon.

Heat olive oil in a large skillet over medium heat. Add the meatballs and cook, turning occasionally, until golden brown and no longer pink in the center. Drain any excess fat.

In a separate small bowl, whisk together cornstarch, brown sugar, reserved pineapple juice, vinegar, and soy sauce until smooth. Pour this mixture over the meatballs in the skillet and cook, stirring constantly, until it thickens and begins to boil, about 5 minutes. Stir in the green pepper and pineapple chunks. Heat until warmed through.
