In French, this part of the chicken is called “sot-l'y-laisse,” meaning “the fool leaves it behind.” It’s a nod to the fact that many chefs consider these pieces to be some of the best meat on the chicken, yet people who don’t know about them often skip them when carving the bird.

The name 'chicken oysters' comes from the fact that these small pieces of meat resemble the size and shape of a traditional sea oyster. Aside from their appearance, however, they have nothing in common with actual oysters.

How to Remove Chicken Oysters From the Bird
Once you’ve removed the breasts and legs, look for the small, dark bump at the top of the thigh (this would’ve been closest to the spine when the chicken was whole). Gently scoop it away with your fingers or use a paring knife to carefully detach it from the thigh.
It’s much easier to remove chicken oysters from a cooked bird than from a raw one.
