I spoke with Mark Kanya, the Director of WhistlePig Whiskey, to learn the ins and outs of milk punch, its history, and the best occasions for enjoying it.
What Exactly Is Milk Punch?
There are two main varieties of milk punch. One is a creamy, frothy concoction similar to spiked eggnog, made by simply combining rum, bourbon, vanilla extract, and milk. The other, known as "Clarified Milk Punch" or "English Milk Punch," is a clear, amber-hued drink. The clarification method is the one Kanya typically uses, a technique that dates back to the 1600s to make spirits shelf-stable for long periods. There’s even a recipe for it published by Ben Franklin in 1763.
How Is Milk Punch Made?
Clarified milk punch is made by combining citrus, milk, and flavors from spirits like brandy, bourbon, rum, or even pineapple. When milk and acid mix, the milk curdles, and these curds act as a natural filter, removing impurities from the citrus juice and liquor. Afterward, the mixture is strained through cheesecloth, leaving a clear liquid. It's typically served over a single ice cube and topped with grated nutmeg. This labor-intensive process can take up to two days, which is why bars often prepare it in large batches to save time.
The dairy-based version is much simpler. It’s a mix of whole milk, rum, bourbon, vanilla, and sugar. Since it doesn't include citrus, no clarification is needed, so the ingredients can simply be stirred together. It’s also topped with grated nutmeg.
What Type of Milk Is Best for Milk Punch?
The richer the milk fat, the better the milk punch. The fat helps curdle and filter the punch. While whole milk is the typical choice for bartenders, heavy cream and half-and-half are also used. Skim or non-fat milk is not ideal because of its low fat content.

Clarified milk punch is perfect for summer, thanks to its light and refreshing qualities. While the dairy-based version is also crisp and enjoyable in the warmer months, it’s traditionally more popular during the holiday season.
