Wine-Steamed Mussels

4 cloves garlic, minced

1 lemon, zested

½ teaspoon red pepper flakes, or to taste

2 cups white wine

freshly ground black pepper to taste

2 pounds mussels, cleaned and debearded

1 cup chopped fresh flat-leaf parsley
Instructions
Prepare all the ingredients before starting.

In a large stockpot, melt butter over medium heat. Add garlic and cook for about 30 seconds, then stir in lemon zest and red pepper flakes for an additional 45 seconds.

Quickly pour the wine into the pot, then season with black pepper. Bring the sauce to a boil, add the mussels, and cover the pot. Shake the pot and let it boil for 1 minute.

Stir the mussels, replace the lid, and continue boiling for another 2 minutes. The shells will start to open. Stir in parsley, cover again, and cook until all the shells have opened, about 1 to 3 minutes.
