Za'atar-Spiced Chicken Thighs

4 bone-in chicken thighs, with skin

1 tablespoon extra-virgin olive oil

sea salt and freshly ground black pepper to taste

3 tablespoons za'atar, divided, or more to taste
Instructions
Preheat your oven to 350°F (175°C).
Pat the chicken dry with paper towels. Transfer the chicken to a bowl and coat it with olive oil. Generously season all sides with sea salt and freshly ground black pepper.
Heat a cast iron skillet over medium-high heat. Add the chicken thighs, skin-side down, to the hot skillet. Immediately sprinkle 1 teaspoon of za'atar over each thigh. Cook the chicken without flipping until the skin is golden and crispy, about 7 to 10 minutes.
Flip the chicken so the skin is facing up and remove the skillet from the heat. Quickly sprinkle the remaining za'atar evenly over each thigh. Spoon some of the rendered chicken fat from the pan over the za'atar to enhance the flavor.
Transfer the skillet to the preheated oven and roast until the chicken juices run clear and the meat is no longer pink near the bone, about 15 minutes.
Cooking Tips
Other cuts of chicken can be used, but be sure to keep the skin on. Keep in mind that cooking times will differ depending on the cut, and boneless chicken will cook faster.
For a quick tahini-lemon dressing, whisk together 3 tablespoons of plain yogurt, 2 tablespoons of tahini, 1 tablespoon of lemon juice, and a pinch of salt.
