Zucchini and Vegetable Frittata

Ingredients Needed

3 medium zucchini, cut into ½-inch slices

½ medium green bell pepper, seeded and chopped

2 cloves garlic, peeled

½ teaspoon salt

3 tablespoons olive oil

1 small onion, diced
-
6 fresh mushrooms, chopped

1 tablespoon butter
-
5 large eggs, beaten

salt and pepper to taste

1 cup shredded mozzarella cheese

3 tablespoons shredded Parmesan cheese
Instructions

Preheat your oven to 350°F (175°C).

In a large oven-safe skillet, combine zucchini, bell pepper, garlic, and salt. Add 1 cup of water and simmer for 5 to 7 minutes until the zucchini softens.

Drain the mixture in a colander and discard the garlic.

Heat oil in the same skillet over medium heat. Add onions, mushrooms, and butter, then stir in the drained vegetables. Cook for about 5 minutes until the onions are soft and translucent. Pour in the beaten eggs and season with salt and pepper. Reduce the heat to low and cook until the eggs are set, about 5 minutes. Remove from heat and sprinkle the mozzarella cheese over the top.

Transfer the skillet to the oven and bake for 10 minutes.

After baking, switch on the broiler. Sprinkle Parmesan cheese over the top of the frittata and broil until the cheese is bubbling and golden, about 5 minutes.

Take the frittata out of the oven and let it sit for 5 minutes before slicing into 5 wedges and serving.
