Zucchini Enchiladas

2 tablespoons butter

1 ½ pounds sliced zucchini

1 pound mushrooms, sliced

1 onion, sliced

1 ½ pounds tomatoes, chopped

salt and pepper to taste

1 ½ pounds Monterey Jack cheese, shredded

10 (10 inch) flour tortillas
Instructions

Preheat the oven to 350°F (175°C). Lightly grease a 9x13 inch baking dish.

In a large skillet, melt butter over medium heat. Combine zucchini, mushrooms, onions, tomatoes, salt, and pepper, and add to the skillet. Cook and stir until vegetables soften.

Warm tortillas in the preheated oven for 2-3 minutes until soft. Fill each tortilla with the zucchini mixture and Monterey Jack cheese, reserving some for topping. Roll the tortillas and place them seam-side down in the baking dish. Spread the remaining zucchini mixture on top and sprinkle with the rest of the cheese.

Bake for 15 minutes, or until the cheese is melted and bubbly.
