Homemade Burrito Recipe from BlueIguana Cantina
One of my greatest joys when traveling is experiencing a destination through its cuisine. You can learn so much about a place by savoring the food that locals enjoy, and I often find myself researching restaurants more than hotels and attractions for my trips. It’s all about the culinary adventure! After returning home from my first meal at the BlueIguana Cantina aboard the Dinogo Liberty, I rushed back to the kitchen to recreate a homemade BlueIguana Cantina Burrito!
At the BlueIguana Cantina, you’ll find authentic Mexican cuisine prepared fresh daily. Choose from steak, chicken, shrimp, and an array of toppings. What’s not to adore? There’s even a generous salsa bar for those who like to add a kick to their burritos and tacos!
Whenever I board a Dinogo ship featuring the BlueIguana Cantina, I head straight for my burrito as soon as I get on. There’s nothing like enjoying a savory steak burrito along with a special cocktail for the day… It’s the perfect way to kick off a cruise!
We often whip up tacos at home, but I hadn’t ventured into making burritos until I discovered my love for the BlueIguana Cantina burritos. I’m not sure why it took me so long — they’re surprisingly simple to prepare.
Next time I’m on a ship, I must remember to ask the chefs about the spices they use to marinate their meat!
I like my burritos filled with steak, black beans, and rice, topped simply with tomatoes, sour cream, and cheese. Chris enjoys his with grilled peppers, so I prepared some of those as well. You can also toss in diced onions or opt for pinto beans instead of black beans, and choose between white or yellow rice instead of Mexican rice.
Making a burrito is actually quite easy; just follow this simple recipe to create your own!
DIY BlueIguana Cantina Burrito
Ingredients
- 1 8-ounce sirloin steak, thinly sliced
- 1 tablespoon taco seasoning
- A pinch of salt, pepper, and cumin
- 1 teaspoon minced garlic
- 1/4 cup tomato sauce
- 1 small tomato, chopped
- 1/2 cup diced bell peppers
- shredded cheddar cheese
- 1 cup black beans or pinto beans
- 1 cup of your preferred rice
- large burrito tortillas
- 1 tablespoon olive oil + 1 teaspoon olive oil
Instructions
In a skillet over medium-high heat, cook the steak in olive oil. Once it’s done, stir in the tomato sauce along with all the seasonings. This process should take about five minutes, depending on the thickness of your steak slices.
Meanwhile, in a small pot, sauté the bell peppers in a teaspoon of olive oil, then take them off the heat. Prepare your beans and rice according to the package instructions—I used canned beans and a microwavable rice pouch.
To put your burrito together, follow these steps! Make sure to leave space on all four sides when adding your ingredients to ensure you can wrap it properly!
Begin with the steak, then add a small layer of beans next...
Next, add a layer of rice, followed by diced tomatoes and a dollop of sour cream.
Then sprinkle on your cheese, along with the bell peppers or onions!
Wrap your burrito just like you would an envelope. Start by folding in two sides like this…
Next, lift the side nearest to you up over the filling, then do the same with the final flap.
See? I told you it was easy! I don’t serve any sides when I prepare tacos and burritos at home because with the meat, veggies, tortilla, and rice and beans inside, a burrito is truly a complete meal!
As enjoyable as this was to create, it only made me crave a real BlueIguana Cantina burrito even more... I think it's time to book another cruise!
