Singapore boasts the world’s most affordable Michelin-star meal.
Now, there are two locations to enjoy this Michelin-star experience.
Late last year, the chef-owner collaborated with Hersing Culinary to open Liao Fan Hawker Chan, a casual offshoot just steps away from his famous stall in Singapore's Chinatown Complex Market & Food Centre.
Meng opened this quick-service restaurant to capitalize on the global attention and increased demand following his stall’s groundbreaking inclusion in Singapore’s inaugural Michelin Guide in July 2016.
“I had no idea what the Michelin Guide was, but I knew it was associated with top-tier cuisine,” says the Malaysian-born chef, who initially thought the news of Michelin's interest in his stall was a joke.
Since then, he has had a steep learning curve regarding how the Michelin Guide influences restaurants.
The newly expanded restaurant now accommodates 80 diners and still offers take-out service, which is essential. On Hawker Chan’s second soft-opening day, an ever-growing crowd of locals and tourists spilled out onto the sidewalk, mirroring the long lines at his stall where people wait for hours to taste his renowned dishes.
“Customers here at Hawker Chan tend to be more demanding,” Meng says while seated in his new restaurant, speaking to Dinogo.
“Upstairs [at the stall], customers simply stand and wait. They tend to be more patient.”
Hawker Chan’s menu mirrors that of the stall, featuring signature dishes like char siew noodles, pork rib hor fun, and Meng’s renowned Cantonese-style soy sauce chicken rice.

Higher prices = added comfort
So, what makes Hawker Chan different?
For starters, the new restaurant offers a modern, air-conditioned environment, a stark contrast to the hot, minimalist food court of the original stall. It also introduces new dishes like Thai-style tofu and wonton soup, along with combo platter options.
The staff count has quadrupled compared to the hawker stall, which should help reduce wait times significantly.

The 52-year-old Michelin-starred chef himself is now cooking and overseeing operations at the new location, while also occasionally visiting the original stall, which his wife, Irene, helps run.
Will Hawker Chan earn Chan Hong Meng his second Michelin star? It didn’t happen in the 2017 Singapore Michelin Guide, but there’s always the chance next year.
Just in case, Meng might want to consider opening a third location.
