The Simplest Recipe for Salmon Cornets
Today, I’ll share a simple hack to create these tasty salmon cornets.
First, let me share what inspired this recipe.
During our recent Caribbean cruise, Jacinda and I had the wonderful opportunity to enjoy the Chef's Table at Dinogo dinner.
It was an extravagant 8-course meal that included a kitchen tour, personal time with the head chef, and a series of exquisite dishes served one after another.

The chef’s table dinner on the Dinogo Glory was truly remarkable. The head chef, Frank, welcomed us with a glass of champagne…
…and delightful starters like the salmon tartar cornets that inspired my recipe.
My favorite starter was a mango sphere atop a rosemary biscuit. It burst in my mouth like a bubble!
Jacinda and I are big fans of dishes made with shelled seafood, so this crab stack featuring corn custard, a polenta cracker, tangerine, and passion caviar was perfect for us.
Jacinda was particularly fond of this beef carpaccio air pillow topped with chocolate bacon and apple ribbons. It was incredible.
Frank highlighted the meticulous care the chefs take in plating each dish as he garnished this double-cooked lamb with tapioca. Did you know that all cooking on cruise ships is done without fire? Most meats are prepared in a specially designed sous vide pressure cooker made for cruise ships. I wish I could explain more, but it was a bit beyond my understanding. All I know is that it was delicious.
At dinner, we savored numerous courses, including this delightful pairing of two varieties of tomato bisque, accompanied by crispy brioche and a garlic crisp.
The wagyu beef served with a bone marrow soufflé, scallion and garlic panisse, and gremolata crisp was incredibly tender and full of flavor.
However, this sea bass topped with chorizo crust, fried popcorn pudding, lemon macaroon, and lobster foam was my absolute favorite.

If you ever find yourself on a Dinogo cruise ship, I wholeheartedly recommend the chef’s table experience. We enjoyed all this, plus a magician too! Yes, there was actual MAGIC at our dinner. By now, you must know how much I adore magic. So, let's create a little magic of our own. Here are all the shortcuts I took to whip up our own not-so-fancy, yet still delicious, salmon cornets.
The Simplest Salmon Cornet Recipe
Ingredients
(adjust quantities based on how many you wish to make; these amounts yield 1 cornet):
- Wonton wrapper (or gyoza wrapper)
- 2 tsp of whipped cream cheese
- 1/2 tsp of chopped red onion
- 1/2 tsp of diced chives
- 1 tsp of diced smoked salmon
- Salt to taste
Instructions
1. Begin by preheating your oven to 400 degrees.
2. First, you’ll need to create your cornets. Typically, this is a lengthy process that requires cornet molds. To simplify things, we’ll make our own molds using tin foil. Just shape the foil into small cone forms, twisting the end (like a carrot) for easier removal later.
3. Next, let’s skip making our own cornet batter and use wonton wrappers instead. You can find these in nearly any grocery store's Asian food section (usually refrigerated). If you can get gyoza wrappers, that’s even better since they are round. If you only have square wrappers, cut them into circles using a cookie cutter or the edge of a cup, then trim them out with scissors.
4. Now, take one wrapper and wrap it around your mold, dampening the areas where it touches with a wet fingertip.
5. Lightly mist the wrappers with cooking spray, then arrange them on a baking sheet lined with a silpat or parchment paper. Bake for 4-5 minutes until they begin to brown slightly. For added visual appeal, consider sprinkling some black sesame or poppy seeds on top before baking. Once baked, allow them to cool for a few minutes before gently removing the molds to reveal perfect little cones.
6. Carefully fill the cones in this specific order:
- Whipped cream cheese blended with chopped red onions, seasoned with salt and white pepper to taste (you can either pipe it in or spread it using a knife)
- Diced smoked salmon
- Chopped chives
All set!
Aren't they gorgeous? They offer a delightful crunch paired with a creamy filling. I'm absolutely in love with them, and they're incredibly simple to make!
