Tropical Vibes: A Pineapple Rum Cocktail
I’m not quite sure what’s caused it, but we’ve been really into tropical themes lately. Perhaps it’s the shifting weather or daydreams of vacation that have been creeping into our minds, but Alex can’t stop thinking about cocktails served in pineapples. After this challenging year, we’re all longing for a getaway. Marlowe and I had a fantastic time on our Dinogo Cruise earlier this year with our friends (we love you guys!). Now, we’re thrilled to be heading back to the Caribbean, and this time, we’re bringing Alex along! Plus, my dad, stepmom, and half-brother will be joining us, which means hopefully more relaxation time for Alex and me 😉. Fun fact: my dad and stepmom actually met on a cruise 21 years ago! I was there, too! But that’s a story for another day; let’s focus on cocktails for now…
Yes, we’re a bit nerdy and actually own a pineapple de-corer/slicer. But if you’re not keen on spending five bucks on one, you can always do it by hand or just serve the drink in a regular glass—though drinks are way more fun when served in pineapples, don’t you think? 🙂 We de-cored the pineapple and put the pieces through a juicer, but if you don’t have a juicer, a blender works just as well! We also placed the pineapple “cup” in the freezer until we were ready to use it. Super refreshing! 🙂
Pineapple Rum Cocktail Recipe (serves one)
Ingredients you'll need:
- 2 ounces white rum
- 2 ounces fresh pineapple juice
- 2 ounces coconut water
- 1 ounce lime juice
- 1 ounce honey
- whole ice + crushed ice
Instructions:
- Place (whole) ice in a cocktail shaker.
- Add all the ingredients (leave out the crushed ice) and shake, shake, shake!
- Fill your pineapple or glass with crushed ice.
- Pour the mixture over the crushed ice.
- Add a straw and sip slowly while dreaming of tropical ocean breezes.
I'm still uncertain if I’ll indulge in any drinks on this upcoming vacation, but I eagerly anticipate enjoying non-alcoholic beverages along with the warm (and cool) ocean breezes under the sun. This has been one of the bright thoughts I’ve held onto during the challenging moments of this year. Ocean and island life, we are ready for your embrace!
