Ingredients

8 ounces beef steak, cut into thin strips

2 teaspoons dry fajita seasoning

1 tablespoon vegetable oil

½ cup sliced red or green bell peppers

⅓ cup sliced onion

1 (11 ounce) package DOLE® Just Lettuce

1 medium tomato, diced

¼ cup drained canned black beans

¼ cup sliced black olives

¼ cup shredded Cheddar cheese

Instructions

Season the beef strips with fajita seasoning and sauté them in oil in a large nonstick pan over medium-high heat for 3 to 4 minutes.

Add the peppers and onions to the pan, cooking for another 2 to 3 minutes until the vegetables are tender but still crisp.

Place lettuce on two large plates, then top with the beef mixture. Add tomatoes, beans, olives, and cheese on top. Serve with Southwest Fiesta Dressing, and refrigerate any leftovers.
Southwest Fiesta Dressing Sauce
In a bowl, combine 1/2 cup plain yogurt, 1/4 cup light sour cream, 2 tablespoons ketchup, 2 tablespoons finely chopped onion, 1 tablespoon lime juice, 1 tablespoon cilantro, 1 teaspoon ground cumin, 1/2 teaspoon chili powder, 1/2 teaspoon garlic powder, and 1/4 teaspoon salt. Whisk until smooth. Yields approximately 1 cup.
