Alaskan Cod and Shrimp with Fresh Tomatoes

6 cloves garlic, minced

5 large tomatoes, chopped

1 teaspoon dried oregano

1 pound Alaskan cod

8 ounces large shrimp, peeled and deveined

Instructions

Heat olive oil in a skillet over medium-high heat. Add garlic and cook, stirring until golden brown, being careful not to burn it. Add tomatoes and cook, stirring until they release their juices. Stir in 1 teaspoon of oregano.

Place the cod and shrimp on top of the tomato mixture, seasoning with salt. Cover the skillet and let it simmer for 3 minutes. Flip the cod, season with more salt and 1 tablespoon of oregano, then cover and cook for another 3 minutes. Remove the lid and cook for 2 to 3 minutes until the juices have evaporated slightly.
