Instructions

In a bowl, whisk the egg, almond flour, and baking powder. Add the mozzarella cheese and stir to combine; set aside.

Preheat the waffle iron as per the manufacturer's instructions.

Lightly grease both sides of the preheated waffle iron. Pour half of the batter onto the iron, spreading it evenly from the center. Close the waffle iron and cook for about 3 minutes, or until the chaffle reaches your desired crispness. Carefully remove the chaffle and repeat with the remaining batter. Let the chaffles cool for 2-3 minutes to crisp up further.
