Aloo Gobi Masala (Cauliflower and Potato Curry)

1 head cauliflower, cut into 1-inch florets

3 potatoes, peeled and cut into 1-inch chunks

1 tablespoon olive oil

1 teaspoon cumin seeds

2 tomatoes, diced

1 onion, chopped

1 teaspoon salt

1 teaspoon curry powder
Cooking Instructions

Place the cauliflower in a large microwave-safe dish and cook on High for 3 minutes. Once done, transfer it to a bowl and set aside. Add the potatoes to the same dish and microwave them on High for 4 minutes. Once ready, combine them with the cauliflower in the bowl.

In a large skillet, heat olive oil and cumin seeds over medium-high heat until the cumin seeds pop and turn golden brown. Add the onions and cook for about 3 minutes. Then add the tomatoes and cook for another 3 minutes, stirring occasionally. Add the cauliflower and potatoes to the pan, seasoning with curry powder and salt. Continue to cook for 3 to 5 minutes until everything is hot and well-mixed. Serve immediately.
