Amy's Grilled BBQ Chicken Salad

2 skinless, boneless chicken breast halves

1 head red leaf lettuce, rinsed and torn

1 head green leaf lettuce, rinsed and torn

1 fresh tomato, chopped

1 bunch cilantro, chopped

1 (15.25 ounce) can whole kernel corn, drained

1 (15 ounce) can black beans, drained

1 (2.8 ounce) can French fried onions

½ cup ranch dressing

½ cup barbecue sauce
Instructions

Preheat your grill to high heat and lightly oil the grates to prevent sticking.

Grill the chicken on both sides until the juices run clear and the internal temperature reaches at least 165°F (74°C), about 6 minutes per side. Remove from heat, allow to cool, then slice.

In a large mixing bowl, combine the lettuce, tomato, cilantro, corn, and black beans. Top with the sliced grilled chicken and crispy French fried onions.

In a separate small bowl, whisk together the ranch dressing and barbecue sauce. Serve it on the side as a dipping sauce, or toss it with the salad to coat evenly.
