Angel Hair Pasta with Roasted Cherry Tomatoes

1 (10 ounce) basket cherry tomatoes, halved

1 tablespoon olive oil

1 teaspoon minced garlic

salt and ground black pepper to taste

4 ounces angel hair pasta

3 basil leaves, cut into thin strips, or more to taste

1 dash red pepper flakes

2 tablespoons fresh grated Parmesan cheese, or to taste (Optional)
Instructions

Preheat the oven to 375°F (190°C).

In a bowl, mix together tomatoes, olive oil, garlic, salt, and pepper; spread the mixture onto a baking sheet.

Roast the tomatoes in the oven for 25 to 30 minutes, or until soft and slightly wrinkled.

In a large pot, bring water with a pinch of salt to a boil. Add the angel hair pasta and cook for 4 to 5 minutes, stirring occasionally until al dente. Drain, reserving a small amount of pasta water.

Transfer the roasted tomatoes and their juices to a small saucepan, adding basil and red pepper flakes. Stir in some reserved pasta water to reach the desired consistency. Heat gently over low for about 5 minutes, then toss with the cooked pasta. Serve topped with freshly grated Parmesan cheese.
Chef’s Tip
You can swap grape tomatoes for cherry tomatoes if preferred.
For a different flavor, chicken broth can replace pasta water to adjust the consistency of the tomatoes.
