Apple and Cranberry-Stuffed Pork Chops
Ingredients Needed

2 tablespoons butter, divided

⅛ yellow onion, minced

1 Granny Smith apple - peeled, cored, and diced

2 stalks celery ribs, finely chopped

¼ cup dried cranberries

1 teaspoon kosher salt

5 (1-inch-thick) boneless pork chops

1 cup apple juice

1 tablespoon cornstarch

2 tablespoons brown sugar

1 teaspoon freshly ground black pepper
Instructions

Preheat your oven to 350°F (175°C).

In a Dutch oven, melt 1 tablespoon of butter over medium heat. Add the onion and cook until soft and golden. Remove from heat, then stir in chopped apples, celery, and dried cranberries. Season with salt.

Place each pork chop on a cutting board. Using a sharp knife, carefully cut a pocket in each chop, leaving three sides intact. Stuff the chops with the apple-cranberry mixture.

In the same Dutch oven, melt the remaining tablespoon of butter over medium heat. Brown the stuffed pork chops for 2 minutes on each side. Remove from heat.

Cover the Dutch oven and place it in the preheated oven. Bake for 45 minutes.

Once done, transfer the pork chops to a plate and cover with foil. Place the Dutch oven back on the stove over medium heat. In a small bowl, mix together apple juice, cornstarch, and brown sugar. Pour the mixture into the Dutch oven, stirring frequently until the sauce reduces by half. Season with black pepper to taste. Pour the apple glaze over the pork chops and serve.
