Asian Chicken Salad
Ingredients
Dressing:

¼ cup vegetable oil

3 tablespoons rice vinegar

2 tablespoons brown sugar

1 tablespoon sesame oil (Optional)

2 teaspoons soy sauce
Salad:

1 head iceberg lettuce - rinsed, dried, and chopped

4 boneless chicken breast halves, cooked and shredded

3 green onions, chopped

1 tablespoon sesame seeds, toasted

1 ½ tablespoons olive oil, or as needed

1 (8 ounce) package dried rice noodles
Instructions

Prepare all the ingredients.

Make the dressing: In a small container with a lid, combine oil, vinegar, brown sugar, sesame oil, and soy sauce. Shake well and set aside until the salad is ready to serve.

Prepare the salad: In a large bowl, mix together lettuce, chicken, green onions, and sesame seeds. Cover and refrigerate for 10 minutes.

While the salad chills, heat oil in a skillet over medium-low heat. Break the rice noodles into small pieces and fry them in batches until they puff up, about 15 to 25 seconds. Remove from the skillet and drain on a paper towel-lined plate.

Once the salad is chilled, divide it into bowls, top with crispy rice noodles, and drizzle with the dressing.
Recipe Tip
For best results, look for cellophane rice noodles, which can be found in the specialty section of most grocery stores, often packaged in clear, rectangular bags.
