Asparagus and Green Bean Salad

Instructions

Preheat the oven to 400°F (200°C).

In a bowl, toss green beans with 1 tablespoon of olive oil until well coated, then spread them out on a baking sheet.

Roast the green beans in the preheated oven for about 10 minutes, or until tender.

Toss asparagus pieces with 1 tablespoon of olive oil in a bowl, then spread them onto the baking sheet with the partially roasted green beans.

Roast the green beans and asparagus together for an additional 10 to 12 minutes, until tender.

In a large bowl, combine the roasted green beans and asparagus with red onion, cherry tomatoes, and parsley. Season with kosher salt and black pepper, and drizzle with olive oil to taste, if desired.
