Aunt Libby's Southern-Style Meatloaf

Ingredients List
For the Meatloaf:

2 pounds ground beef

1 onion, chopped

1 cup ketchup

For the Sauce:

1 ½ cups ketchup

¼ cup water
-
3 tablespoons white wine vinegar

3 tablespoons brown sugar

2 tablespoons Dijon mustard

2 teaspoons Worcestershire sauce

Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan with butter.

In a large bowl, combine beef, onion, 1 cup of ketchup, breadcrumbs, eggs, salt, and pepper. Transfer the mixture into the prepared loaf pan, shaping it into a loaf.

In a saucepan, mix together 1 1/2 cups of ketchup, water, vinegar, brown sugar, mustard, and Worcestershire sauce. Cook over medium heat, stirring occasionally until the sauce is smooth and heated through, about 10 minutes. Pour one-third of the sauce over the meatloaf.

Bake the meatloaf in the preheated oven, basting every 25 minutes with the remaining sauce. Cook until the internal temperature reaches 160°F (70°C), about 1 to 1 1/2 hours. Let the meatloaf rest in the pan for 10 minutes before slicing.
Chef's Tips
If you find that your meatloaf doesn’t fit in one pan, feel free to use two loaf pans to give it more room to cook evenly.
Aunt Libby’s original recipe calls for 2 pounds of ground beef, but I usually opt for 1.3 to 1.5 pounds for my smaller family of three, adjusting the other ingredients accordingly. That way, a single loaf pan is sufficient.
Try to avoid substituting ground beef with turkey. For the best flavor, choose an 80% lean beef blend. It's not the healthiest option, but the taste is unbeatable!
