Bacon and Hash Brown Omelette Muffin Cups

3 cups frozen shredded hash brown potatoes, thawed

3 tablespoons butter, melted

1/8 teaspoon salt

1/8 teaspoon freshly ground black pepper

2 cups shredded Mexican-style four-cheese blend

6 large eggs, lightly beaten

1/4 cup chopped red bell pepper

1/4 teaspoon crushed red pepper (optional)

6 slices bacon, crisp-cooked and chopped

chopped fresh chives, for garnish
Instructions

Preheat your oven to 425°F (220°C) and lightly grease a 12-cup muffin tin with cooking spray.

Wrap the hash browns in a clean towel and press to remove excess moisture. Combine the hash browns, melted butter, salt, and pepper in a large bowl. Press about 1/4 cup of this mixture into the bottom and sides of each muffin cup.

Bake the hash browns for 18-20 minutes, or until they are lightly browned.

While the hash browns bake, whisk together the cheese, eggs, bell pepper, and crushed red pepper (optional) in a bowl.

Remove the muffin tin from the oven and reduce the temperature to 400°F (200°C). Layer the baked hash browns with half of the cooked bacon, followed by the egg mixture and the remaining bacon. Return to the oven and bake for an additional 13-15 minutes, or until a knife inserted into the center comes out clean. Garnish with fresh chives before serving.
