Bacon-Wrapped Pork Loin with Sweet Glaze

1 (3 pound) boneless pork loin

8 slices bacon

1 sweet onion, minced

2 tablespoons honey

2 tablespoons balsamic vinegar

2 tablespoons dry red wine

1 tablespoon chopped fresh rosemary

2 tablespoons golden raisins
Instructions

Preheat your oven to 375°F (190°C). Line a shallow roasting pan with foil.

Season the pork loin with salt and pepper. Wrap bacon slices around the pork and secure them with toothpicks.

Heat a large skillet over medium-high heat. Brown the pork loin on all sides for about 10 minutes. Transfer the pork to the prepared roasting pan.

In a medium bowl, mix together onion, honey, balsamic vinegar, red wine, and rosemary. Spread the mixture over the pork loin.

Roast the pork in the preheated oven for 15 minutes. Sprinkle raisins on top and continue roasting until the internal temperature reaches 145°F (63°C), about 15 minutes more. Remove from the oven and let rest for 5 minutes before removing toothpicks and slicing.
