Baked Apple French Toast Casserole

1 (8 ounce) loaf French bread, cut into small cubes

3 Granny Smith apples, peeled, cored, and cut into small dice

¼ cup brown sugar

1 teaspoon ground cinnamon

Preheat your oven to 350°F (175°C) and coat a 7x11-inch baking dish with cooking spray.

In a large bowl, whisk together eggs, half-and-half, milk, sugar, and vanilla extract. Add the bread cubes and stir to coat evenly. Let the bread soak for at least 10 minutes until well-moistened.

In a skillet, melt the butter over medium heat. Add the apples and brown sugar, stirring to fully dissolve the sugar. Sprinkle in the cinnamon and cook, stirring regularly, until the apples are warm but still firm, about 5 to 7 minutes.

Stir the apple mixture into the soaked bread mixture, then pour everything into the prepared baking dish.

Bake in the preheated oven for 35 to 45 minutes, or until the top is golden brown and the center remains slightly soft.
