Baked Eggplant Delight

Cooking Instructions
Preheat your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper or lightly greasing it for easy cleanup.
Cut the eggplant in half lengthwise, then slice each half into quarters. Next, halve each quarter for shorter pieces. Arrange the eggplant, skin-side down, on the prepared baking sheet. Drizzle with olive oil and season with salt and pepper.
Roast the eggplant in the preheated oven for 25 to 30 minutes, until tender and golden brown. Once done, remove from the oven and drizzle with fresh lemon juice. Serve immediately while hot.
