Baked Shirred Eggs

¼ teaspoon softened butter

2 teaspoons heavy cream

2 large eggs

salt and pepper to taste

1 teaspoon minced fresh chives

1 teaspoon grated Parmesan cheese
Instructions

Preheat your oven to 325°F (165°C).

Lightly butter the inside of a 6-ounce ramekin. Pour the cream into the ramekin, and gently crack the eggs on top, being careful not to break the yolks. Use a spoon to center the yolks, then season with salt, pepper, fresh chives, and a sprinkle of Parmesan cheese.

Bake in the preheated oven for 12 to 15 minutes, or until the egg whites are set but the yolks remain soft. Let cool for 2-3 minutes before serving.
