Balsamic-Glazed Roasted Brussels Sprouts
Ingredients List
-
1 (16 ounce) package fresh Brussels sprouts
-
1 small red onion, thinly sliced
-
5 tablespoons olive oil, divided
-
¼ teaspoon salt
-
¼ teaspoon freshly ground black pepper
-
1 shallot, chopped
-
¼ cup balsamic vinegar
-
1 tablespoon chopped fresh rosemary
Instructions
-
Preheat your oven to 425°F (220°C). Lightly grease a baking sheet with cooking spray.
-
In a mixing bowl, toss together the Brussels sprouts and onion. Drizzle with 3 tablespoons of olive oil, season with salt and pepper, and stir until evenly coated. Spread the mixture onto the prepared baking sheet.
-
Roast in the oven for 25 to 30 minutes, or until the Brussels sprouts and onion are tender and caramelized.
-
In a small skillet, heat the remaining 2 tablespoons of olive oil over medium-high heat. Sauté the shallot until soft, about 5 minutes. Add the balsamic vinegar and cook, stirring, until the glaze slightly thickens, about 5 minutes. Stir in the rosemary, then pour the balsamic glaze over the roasted Brussels sprouts and onion.
