Barbecue-Style Braised Beef Short Ribs

2 tablespoons vegetable oil

5 pounds lean beef short ribs, cut into 3-inch pieces

1 teaspoon salt

½ teaspoon fresh ground black pepper

1 large onion, cut into thick slices and separated into rings

5 carrots, peeled and cut into chunks

4 cloves garlic, coarsely chopped

1 (16 ounce) can tomato sauce

1 cup barbecue sauce

1 cup beef broth
Cooking Instructions

Preheat the oven to 325°F (165°C).

In a large, heavy oven-safe pot or Dutch oven, heat oil over medium heat. Brown the ribs on all sides, about 5 minutes, working in batches if necessary. Season with salt and black pepper as you go. Transfer the browned ribs to a paper towel-lined plate to drain.

Add onion rings and carrots to the same pot. Cook, stirring occasionally, until the onions become translucent and begin to brown, about 8 minutes. Add garlic and cook for another minute, until fragrant. Stir in tomato sauce, barbecue sauce, and beef broth. Bring the mixture to a boil, then reduce the heat and simmer for 1 minute to combine the flavors. Add the browned ribs back into the pot.

Cover the pot and place it in the preheated oven. Bake until the meat is extremely tender, turning the ribs occasionally, about 2 1/2 hours. Before serving, taste and adjust the seasoning with salt and black pepper.
