Basmati Rice Pilaf Recipe

1 ½ cups chicken stock

1 tablespoon vegetable oil

¼ cup finely diced onion

1 bay leaf

1 cup uncooked basmati rice

1 tablespoon unsalted butter
Instructions

Heat chicken stock in a saucepan over medium heat until it begins to boil, then keep it warm for later use.

In a 2-quart saucepan, heat vegetable oil over medium-high heat. Add the onion and bay leaf, cooking until the onion softens, about 5 minutes.

Add basmati rice to the saucepan and stir to coat the rice with the oil and onion mixture.

Pour the hot chicken stock into the rice mixture. Season with salt and stir well.

Bring the mixture to a boil, then cover the pan and reduce the heat to medium-low. Simmer for about 20 minutes, or until the rice is tender and the liquid is absorbed.

Remove the pan from heat, discard the bay leaf, and stir in butter. Fluff the rice with a fork before serving.
