Bavarian-Style Crispy Roasted Chicken

1 (4 pound) broiler-fryer chicken, cut in half lengthwise
Instructions

Preheat your oven to 425°F (220°C).

In a spice grinder or mortar, combine kosher salt, caraway, sage, fennel, coriander, and rosemary. Grind to a coarse texture. Transfer the mixture to a bowl and stir in paprika, garlic powder, flour, and onion powder. Add vegetable oil and mix into a smooth paste.

Pat the chicken halves dry with paper towels, and tuck the wing tips behind the back. Coat the chicken halves evenly with the spice paste, making sure to season under the wings and legs. Place the chicken halves, skin-side up, in a baking dish or roasting pan, leaving space between them.

Roast in the preheated oven for about 1 hour, or until the chicken is no longer pink at the bone and the juices run clear. Use an instant-read thermometer to check that the internal temperature has reached 165°F (74°C) at the thickest part of the thigh. Remove from the oven and let rest for 10 minutes before carving.
