5 slices bacon

1 onion, chopped

2 cloves garlic, finely chopped, or more to taste

1 pound lean ground beef

½ cup barbecue sauce

½ cup soft bread crumbs

2 eggs, beaten

1 teaspoon Dijon mustard

Instructions

Preheat your oven to 375°F (190°C) and grease a 9x11-inch baking dish.

Lay bacon slices in a large skillet and cook over medium-high heat for about 1 to 2 minutes on each side, until the edges begin to curl. Transfer the bacon to a plate lined with paper towels to drain, reserving 1 tablespoon of bacon drippings in the skillet.

Sauté the onion and garlic in the reserved bacon drippings until softened, about 6 to 7 minutes. Remove from heat and set aside to cool.

In a large bowl, combine the cooled onion and garlic mixture with ground beef, 1/2 cup barbecue sauce, bread crumbs, eggs, Worcestershire sauce, Dijon mustard, oregano, and chili powder. Mix everything together thoroughly with your hands until well blended. Shape the mixture into a log-shaped meatloaf and place it into the prepared baking dish.

Wrap the partially cooked bacon slices around the meatloaf, tucking the ends underneath.

Bake in the preheated oven for 35 minutes. Brush the meatloaf with 3 tablespoons of barbecue sauce. Continue baking for another 10 minutes, or until the center is no longer pink and the internal temperature reaches at least 160°F (70°C) when tested with an instant-read thermometer. Let the meatloaf rest for 10 minutes before slicing and serving.
