Ingredients Needed
-
2 tablespoons all-purpose flour, or more as needed
-
6 pork chops
-
salt and pepper to taste
-
2 tablespoons olive oil
-
1 cup uncooked long grain white rice
-
1 cup beef consomme
-
½ cup water
-
1 medium onion, thinly sliced
Instructions
-
Preheat your oven to 350°F (175°C).
-
Pour flour into a shallow bowl. Season both sides of the pork chops with salt and pepper, then coat them lightly with the flour.
-
Heat oil in a large skillet over medium heat. Brown the pork chops, about 3 minutes on each side. Remove and drain on paper towels.
-
In a large baking dish, combine the rice, beef consommé, and water. Layer the onion slices on top of the rice, and arrange the pork chops over the onions.
-
Bake in the preheated oven for about 1 1/2 hours, or until the rice is tender and the pork reaches an internal temperature of at least 145°F (63°C) with a thermometer inserted into the center.
