Ingredients Needed

1 cup long-grain rice

1 tablespoon olive oil

1 small sweet onion, finely chopped

3 cloves garlic, minced

1 small green bell pepper, chopped

1 small red bell pepper, chopped

1 teaspoon dried basil

1 teaspoon dried oregano

½ teaspoon ground black pepper

1 tiny pinch salt

1 splash dry white wine

1 tablespoon grated Parmesan cheese (Optional)
Instructions

In a saucepan, bring water and rice to a boil. Lower the heat to medium-low, cover, and let it simmer until the rice is fully cooked and the liquid has been absorbed, approximately 20 to 25 minutes.

Heat olive oil in a large skillet over medium-high heat. Sauté onions in the hot oil for about 3 minutes until soft. Add garlic and cook for an additional 2 to 3 minutes, until the onion turns translucent. Stir in the bell peppers and cook for 5 minutes or until softened. Season with basil, oregano, salt, and black pepper.

Pour in the wine and reduce the heat to medium-low. Let the mixture simmer until the liquid reduces by half, about 5 minutes. Add the cooked rice to the skillet and mix well with the vegetables. Serve topped with Parmesan cheese.
