Bengali Chicken Curry with Potatoes

2 large tomatoes, diced

4 skinless, boneless chicken breast halves - cut into bite-size pieces

2 large red-skinned potatoes, chopped

½ cup fresh cilantro
Cooking Instructions

In a large skillet, heat olive oil over medium-high heat. Sauté the onions for about 5 minutes until they are translucent. Add the ginger-garlic paste and cook for an additional 5 minutes. Reduce heat to medium and mix in the tomatoes, cooking until they become soft and pulpy, about 5-10 minutes. Season with cayenne pepper, curry powder, garam masala, turmeric, and cumin, and cook for another 5 minutes.

Add the chicken and potatoes to the skillet. Let the mixture simmer, stirring occasionally, until the chicken is cooked through and the potatoes are tender, around 20 minutes. Sprinkle fresh cilantro over the curry and continue simmering for another 10 minutes. Serve hot and enjoy.
