Instructions

Preheat the oven to 325°F (165°C). Lightly grease a shallow baking dish.

In a small bowl, combine blue cheese, crispy bacon, and fresh chives. Divide the mixture into two portions, and shape each into a loose ball. Stuff each ball into the pocket of a butterflied pork chop, then secure with toothpicks. Season with garlic salt and pepper, remembering that the blue cheese will add saltiness. Arrange in the prepared baking dish.

Bake for 20 minutes in the preheated oven, or longer if the pork chops are thicker. Cook until the stuffing is hot and the pork reaches your preferred level of doneness. Garnish with freshly chopped parsley and serve.
