½ cup cooked rice

2 tablespoons olive oil, divided

⅛ cup minced carrots

⅛ cup celery

6 bell peppers (any color) stems and seeds removed, cut in half lengthwise

½ pound ground beef

¼ pound pancetta or lightly smoked bacon, diced

1 ½ cups prepared marinara sauce

¼ cup red wine
-
½ teaspoon red pepper flakes

⅓ cup heavy cream
-
½ cup grated Parmesan cheese, divided
Instructions
Preheat your oven to 375°F (190°C).
Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the carrots and celery, cooking and stirring until the vegetables become tender, about 5 minutes.
Mix in ground beef and pancetta, cooking until browned and crumbled. Drain any excess liquid, then return to heat. Pour in marinara sauce, wine, and red pepper flakes, and let it simmer for 10 minutes. Stir in cream, half of the Parmesan, and rice. Continue simmering for 5 more minutes, or until most of the liquid is absorbed.
Arrange the peppers in a shallow baking dish and stuff them with the beef mixture. Drizzle with the remaining olive oil and sprinkle with the rest of the Parmesan cheese.
Bake uncovered in the preheated oven for 30 minutes. Serve hot and enjoy.

Cook’s Tip
Orzo pasta can be used as a substitute for the rice.
If you don't have leftover rice, simply bring 3/4 cup of water and 1/2 cup of rice to a boil. Cover, reduce the heat to low, and let it simmer until the water is absorbed, around 20 minutes. Let the rice sit for 5 minutes, then fluff with a fork. You'll have a little extra rice left over.
