Brazilian-Style White Rice

2 tablespoons minced onion

2 cloves garlic, minced

2 tablespoons vegetable oil

4 cups hot water
Instructions

Rinse the rice thoroughly under cold water using a colander, then set it aside.

Heat the oil in a saucepan over medium heat. Add the chopped onion and cook for one minute. Stir in the minced garlic and cook until golden brown. Add the rice and salt, and continue to cook, stirring occasionally, until the rice begins to brown. Pour in the hot water, stir, and reduce the heat to low. Cover the saucepan and let it simmer for 20 to 25 minutes until the water is absorbed and the rice is cooked through.
