Breakfast Pies: Savory, handheld breakfast treats with a flaky biscuit crust, filled with sausage, eggs, and cheese. A satisfying way to start your day.

Ingredients you'll need: sausage, onions, green peppers, eggs, milk, shredded cheese, and biscuit dough.
-
¾ pound breakfast sausage
-
⅛ cup minced onion
-
⅛ cup minced green bell pepper
-
1 (12 ounce) can refrigerated biscuit dough
-
3 eggs, beaten
-
3 tablespoons milk
-
½ cup shredded Colby-Monterey Jack cheese
Directions: Begin by preheating your oven to 400°F (200°C). In a large skillet, cook sausage with onions and green peppers over medium-high heat until browned. Drain the mixture, crumble the sausage, and set aside. Next, separate the biscuit dough into 10 portions. Flatten each biscuit and press it into the bottom and sides of muffin cups. Evenly distribute the sausage mixture into the cups. Whisk together eggs and milk, and pour the mixture into each cup. Top with shredded cheese. Bake in the preheated oven for 18 to 20 minutes, or until the filling is firm and golden.
- Bake the breakfast pies for about 18-20 minutes, or until the filling is set and the tops are golden brown.
Tip
I find using a turkey baster to draw up the egg mixture and then gently squirt it over the sausage works really well. It’s much cleaner than trying to pour the eggs into each muffin cup, and it helps avoid spills.
