Broccoli and Cheddar Quiche

1 (9-inch) deep dish prepared pie crust

1 teaspoon vegetable oil, or as needed

2 cups finely chopped broccoli

4 eggs

½ cup milk

1 tablespoon Dijon mustard

1 teaspoon dried oregano

½ teaspoon salt

¼ teaspoon ground black pepper

½ teaspoon dried thyme

½ cup shredded Cheddar cheese

¼ cup grated Parmesan cheese
Instructions

Preheat the oven to 350°F (175°C) and line a baking sheet with foil.

Place the pie crust in a 9-inch deep-dish pie pan and prick the crust all over with a fork. Brush with oil, then place the crust on the prepared baking sheet.

Bake the crust in the preheated oven for 8 minutes.

Microwave the broccoli in a bowl on high for about 4 minutes until bright green and slightly tender. In a separate bowl, whisk together the eggs, milk, Dijon mustard, oregano, salt, pepper, and thyme. Stir in the broccoli and pour the mixture into the crust. Sprinkle with Cheddar and Parmesan cheeses. Return the pie dish to the baking sheet.

Bake for about 40 minutes, or until a knife inserted into the center comes out clean. Let it stand for 10 minutes before cutting.
