Broccoli Kugel for New Moms
Ingredients Needed
-
1 tablespoon vegetable oil
-
1 onion, sliced
-
1 cup mayonnaise
-
4 eggs
-
3 tablespoons all-purpose flour
-
salt and ground black pepper to taste
-
2 (16 ounce) bags frozen chopped broccoli, thawed
Step-by-Step Instructions
-
Preheat the oven to 375°F (190°C). Lightly grease an 8x8-inch baking dish.
-
Heat vegetable oil in a skillet over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes.
-
Lower the heat to medium-low and continue cooking the onion, stirring occasionally, until it becomes dark brown and very tender, about 15 to 20 minutes. Set aside to cool slightly.
-
In a large bowl, whisk together the mayonnaise, eggs, flour, salt, and pepper. Stir in the broccoli and caramelized onion until well combined. Transfer the mixture into the greased baking dish.
-
Bake the casserole in the preheated oven for about 90 minutes, or until the broccoli is tender and the kugel is set.
