Caprese Poached Eggs

1 tablespoon distilled white vinegar

4 eggs

2 English muffin, split

4 (1 ounce) slices mozzarella cheese

1 tomato, thickly sliced

4 teaspoons pesto

Instructions

Fill a large saucepan with 2 to 3 inches of water and bring it to a boil over high heat. Once boiling, lower the heat to medium-low, add vinegar and 2 teaspoons of salt, then maintain a gentle simmer.

While the water simmers, place a slice of mozzarella and a thick tomato slice on each half of an English muffin. Toast in a toaster oven for about 5 minutes until the cheese is melted and the muffin is golden brown.

Crack an egg into a small bowl. Gently lower the bowl just above the simmering water, and carefully slide the egg into the water. Repeat for the remaining eggs. Poach the eggs for 2 1/2 to 3 minutes until the whites are firm but the yolks remain slightly runny. Remove the eggs using a slotted spoon and gently blot with a paper towel to remove excess water.

To serve, place a poached egg on top of each toasted English muffin half. Add a teaspoon of pesto sauce on each egg and season with salt to taste.
