Instructions

In a saucepan, combine broccoli, broth, and quinoa. Bring the mixture to a boil, then lower the heat to medium-low. Cover and simmer until the quinoa is tender and the broth has been absorbed, about 15 to 20 minutes.

Stir in the Cheddar cheese, cover again, and let it sit for 2 to 3 minutes until the cheese melts. Season with salt and pepper to taste.
