Cheerful Roast Chicken

Instructions
Begin by preheating your oven to 425°F (220°C). Pour the wine into a 10-inch cast-iron skillet and set it aside for later use.
Stuff the chicken cavity with lemon halves and garlic cloves. Carefully tuck half of the butter beneath the skin of each breast. Coat the entire chicken with Dijon mustard, then season generously with salt and pepper. Transfer the chicken to the cast-iron skillet.
Roast the chicken in the preheated oven for 15 minutes, then reduce the temperature to 350°F (175°C) and continue roasting until the meat is no longer pink and the juices run clear, about 1 more hour. Use an instant-read thermometer to check the thickest part of the thigh; it should read 180°F (82°C). Once done, remove the chicken from the oven, cover it with a double layer of aluminum foil, and let it rest for 15 minutes before carving.
