Cheese and Potato Pierogi

6 cups all-purpose flour

5 pounds potatoes, peeled

1 pound processed cheese, cubed

Instructions
Fill a large pot with salted water and bring it to a boil. Add the potatoes and cook until they are tender but firm, around 15 minutes. Drain the water once done.
In a mixing bowl, combine flour, eggs, and salt. Gradually add water, little by little, until the dough becomes firm. Roll out small portions of the dough to about 1/4 inch thickness. Using a large biscuit cutter or drinking glass, cut out circles.
For the filling: In a bowl, mix together mashed potatoes, cheese, salt, pepper, and onion powder. Place 1 to 2 tablespoons of the potato mixture in the center of each dough circle, fold the dough over, and seal the edges. To cook, bring a large pot of water to a boil. Drop in the pierogi one by one and stir gently. They are ready when they float to the surface.
